Peanut Butter Cookies

Makes 36 servings

Per Serving

Fat: 3 g

Ingredients

2/3 cup firmly packed brown sugar

½ cup smooth or chunky peanut butter

1/3 cup (5 tablespoons plus 1 teaspoon) light margarine, softened

¼ cup egg substitute

½ cup cream of wheat cereal, uncooked (regular, instant, or quick)

1 teaspoon vanilla extract

1 ¼ cups all-purpose flour

½ teaspoon baking soda

Instructions

Preheat the oven to 350 degrees. Spray two baking sheets with vegetable oil cooking spray.

In a medium bowl, beat the brown sugar, peanut butter, margarine, and egg substitute until fluffy. Blend in the cereal and vanilla. Stir in the flour mixed with baking soda to make a stiff dough.

Drop by rounded spoonfuls on the prepared baking sheets, spacing the cookies about 2 inches apart. Flatten the balls with the bottom of a floured glass or fork. Bake for 8 to 9 minutes. Cool on wire racks.
