Ingredients
3 cups sliced carrots
1 (16-ounce) can cut sweet potatoes in light syrup, drained
¼ cup firmly packed brown sugar
2 tablespoons unsweetened orange juice
½ teaspoon ground cinnamon
1/8 teaspoon slat
¼ teaspoon vanilla extract
Instructions
Preheat the oven to 350 degrees. Spray a 9-inch baking pan with vegetable oil cooking spray.
Cook the carrot slices in boiling water to cover for 15 minutes, or until very tender; drain.
Fit a food processor with the steel blade. Turn the carrots into the processor bowl along with the sweet potatoes, brown sugar, orange juice, cinnamon, salt, and vanilla. Process until smooth; scrape down sides as needed.
Spoon the sweet potato mixture into the prepared dish, spreading it evenly. Bake uncovered for 20 to 25 minutes.
