Canadian Baco Chicko

Source So Fat, Low Fat, No Fat

Makes 6 servings

Per Serving

Fat: 3 to 4 g

Ingredients

6 to 8 breaded chicken tenders (or boneless, skinless chicken tenders)

½ cup chopped onion

½ cup chopped green pepper

¾ cup shredded Canadian bacon

1 teaspoon minced garlic

2 (8-ounce) cans low-salt stewed tomatoes

1 ½ cups frozen green peas

1 ½ cups cholesterol-free noodles or macaroni

Salt and pepper to taste

Instructions

Brown the chicken on both sides in a nonstick skillet. Add the onion, green pepper, Canadian bacon, and garlic. Sauté for 5 to 6 minutes, stirring to let onions, peppers, and bacon cook evenly.

Add tomatoes and peas. Simmer for 10 to 12 minutes, stirring occasionally.

Meantime, cook noodles or macaroni in a large pot of boiling water until nearly tender. Drain. Add to the chicken and sauce and continue to simmer about 10 more minutes. Correct seasoning.
