Greek Salad, No Tomatoes

Serves 4

Protein: 1 g

Carbohydrate: 2 g

Ingredients

4 cups torm romaine leaves

3 scallions, sliced, including the firm green

1 large cucumber, peeled if necessary, sliced thin

4 ounces feta cheese

¼ cup olive oil

2 tablespoons red wine vinegar

Dash of cinnamon

Pepper to taste

8 kalamata olives, pitted

Instructions

Put the romaine, scallions, and cucumber in a salad bowl and toss. Crumble the feta cheese on top. In a screw-top jar, mix the oil, vinegar, cinnamon, and pepper and shake well. Pour the dressing over the salad and toss well to combine. Tuck in the olives and serve immediately.
