Total carbohydrates: 1.3 grams per ½ cup
Makes about ½ cup
Ingredients
1/3 cup butter
2 egg yolks
1 tablespoon fresh lemon juice
salt to taste
cayenne pepper to taste
nutmeg to taste (optional)
Instructions
Heat the butter in a saucepan over low heat until gently bubbling. Meanwhile, place the egg yolks in a blender or food processor and blend for a few seconds. With the motor running, add the lemon juice, salt, cayenne, and nutmeg, if using. Slowly add the melted butter in a thin stream and blend for 10 seconds, or until thickened and smooth.
