Ingredients

2 tablespoons olive oil

4 slices slab bacon, cut into ½-inch pieces

2 tablespoons pine nuts

2 small cloves garlic, minced

1 pound spinach leaves, trimmed, washed well, and spun dry

1 tablespoon balsamic vinegar

1 tablespoon grated Parmesan cheese

Instructions

Heat 1 tablespoon of oil in a heavy skillet over medium-high heat until hot but not smoking. Add the bacon and sauté, stirring occasionally, for 4 minutes, or until browned. Turn the heat to medium, add the pine nuts, and cook for 1 minute, stirring occasionally. Add the garlic and cook, stirring, for 30 seconds. Add the spinach, vinegar, and remaining tablespoon of oil, cook, tossing gently for 15 seconds, or until the spinach is warm and a bit wilted. Transfer to serving plates, sprinkle with Parmesan, and serve immediately.
