Two-Cheese Spread

Total carbohydrates: .76 gram per ¾ cup

Makes about ¾ cup

Ingredients

1/3 cup grated sharp cheddar cheese

1/3 cup grated Monterey Jack cheese

4 tablespoons (1/2 stick) butter

1 ½ teaspoon olive oil

Instructions

Combine the cheddar, Monterey Jack, and butter in a small saucepan (preferably nonstick) and cook, stirring, over low heat about 3 minutes, until the cheese mixture becomes smooth and thick. Pour the oil into a small bowl or ramekin and pour the cheese mixture over it. Cover and chill for 10 minutes. Store in the refrigerator for up to 5 days.
