Chocolate Butter Cream

Source: Dr. Atkin's Quick & Easy New Diet Cookbook

Carbs: 4.4 grams

Ingredients:

4 large egg yolks

2 tablespoons cognac

12 teaspoon vanilla extract

1 tablespoon shaved, unsweetened dark chocolate

8 tablespoons (1 stick) unsalted butter, softened

1 packet sugar substitute (do not use Equal or aspartame; they lose their sweetness when heated)

Instructions:

Beat the egg yolks, cognac, vanilla extract, chocolate, butter, and sugar substitute in a large bowl with an electric mixer for 2 minutes. Place the mixture in the top of a double boiler over gently simmering water and cook it for 7 minutes, stirring constantly. Remove from the heat, let cool to room temperature, and serve.
