Easy Blueberry Cobbler

Exchanges: 1 Starch, 1 Fruit, 1 Fat   Protein: 3g   Fat: 6g   Carb: 27g

Ingredients:

3 cups fresh blueberries

Vegetable cooking spray

1 tablespoon lemon juice

1 egg, beaten

1 cup all purpose flour

2 tablespoons powdered sugar substitute

1/4 cup plus 2 tablespoons reduced-calorie margarine, melted

Instructions:

1. Place blueberries in bottom of a 10x6x2-inch baking dish coated with cooking spray; sprinkle with lemon juice.

2. Combine egg, flour, and sugar substitute; stir until mixture resembles coarse meal. Sprinkle over blueberries.

3. Drizzle melted margarine over top. Bake at 375 degrees for 30 minutes. Serve warm.
