Deviled Eggs

Ingredients
3 hard-boiled eggs
2 teaspoons minced capers
1 tablespoon minced celery
1 tablespoon minced scallion (white part only)
1 ounce boiled ham, minced
1 tablespoon mayonnaise
½ teaspoon Dijon mustard
salt and pepper to taste
paprika for garnish (optional
chopped fresh flat-leaf parsley or chopped fresh dill for garnish (optional)
Instructions
Cut the eggs in half, remove the yolks, and place them in a bowl. Reserve the whites. Add the capers, celery, scallion, ham, mayonnaise, mustard, salt, and pepper to the egg yolks and mix well.
Divide the yolk mixture evenly among the reserved whites, mounding it slightly. Garnish the deviled eggs with paprika and parsley if desired. Serve immediately or store, covered, in the refrigerator for up to 1 day.
