Chiles Rellenos

Ingredients

2 eggs, beaten

1 cup flour

1 teaspoon salt

¼ cup milk

8 whole large green chiles, canned or roasted (large roasted works best)

8 thick slices monterey jack cheese

Green chile sauce, recipe follows

Instructions

Combine flour, eggs, salt and milk.  Stuff whole chiles with cheese and completely cover with flour and egg mixture.  Pour vegetable oil into heavy skillet to 1 ½ inch depth and place on medium-high heat.  Brown first on one side, then turn and brown other side.  Remove from pan to serving platter.  Serve with green chile sauce. 

Green Chiles Sauce

Ingredients

1 can diced green chiles

1 can chicken broth

½ teaspoon salt

¼ teaspoon white pepper

Flour to thicken

Instructions

In saucepan, heat chicken broth.  Combine water and flour to make a paste and add to broth.  Stir until thickened to gravy consistency.  Add green chiles.   Serve with Chiles Rellanos.
