Spinach Patties

Serves 4

Ingredients:

1-pound bag of frozen spinach, thawed, with the water squeezed out

1-½ cups cooked white rice

2 tablespoons flour

3 egg whites

2 tablespoons grated parmesan cheese

Salt and pepper to taste

Instructions:

Mix all ingredients together into a pastelike consistency.

Shape into small patties about two-inches in diameter.

Spray patties with cooking spray and place in a lightly greased heated skillet.

Cook on medium-high heat for about 7 to 10 minutes on each side, or until both sides are crusty.
