Healthy Chicken Nuggets

Serves 8
Ingredients:
2 pounds precut chicken breast cutlets
3 egg whites
¾ cup cornmeal
Cajun or Italian spice mix (optional)
Instructions:
Preheat the oven to 400 degrees. Dip chicken pieces into egg whites until fully covered. Roll into cornmeal. Add any seasonings.
Place the chicken on a lightly greased cookie sheet.
Bake for 15 to 20 minutes. Serve, or freeze for later.
