Garlicky Portobello Mushrooms

Ingredients

2 medium Portobello mushrooms (5- to 6-inch diameter)

½ teaspoon olive oil

2 teaspoons chicken broth

3 cloves garlic, minced

2 teaspoons freshly grated Parmesan cheese

Instructions

Preheat the oven to 400 degrees. Spray a baking sheet with nonstick spray. Gently rinse the mushrooms. Remove the stems. Pat the mushrooms dry with paper towels, especially the gills. Place the mushrooms, stem side up on the prepared baking sheet.

Combine the olive oil, chicken broth, and garlic. Drizzle the garlic mixture over the mushrooms. Sprinkle with Parmesan cheese. Bake for 20 to 25 minutes until bubbly and the edges are somewhat shrunken.
