Ingredients
2 cups self-rising flour
¼ cup plus 2 tablespoons low-calorie mayonnaise substitute
¼ cup nonfat buttermilk
Vegetable cooking spray
Instructions
Combine the first 3 ingredients, stirring just until moistened. Spoon batter into muffin pans coated with cooking spray.
Bake at 375 degrees F for 12 to 15 minutes or until lightly browned.
