BLT Soup

Ingredients

4 slices smoked bacon

1 tablespoon butter

½ cup chopped onion

½ cup chopped green bell pepper

½ cup chopped celery

2 garlic cloves, minced

1 quart chicken broth

1 medium tomato, diced

Chopped or shredded romaine or arugula

½ cup cream

Salt, pepper, and hot pepper sauce to taste

¼ cup croutons for garnish, optional

Instructions

Fry the bacon crisp and crumble it when cool; set aside. In a soup pot, melt the butter and sauté the onion, green pepper, celery, and garlic over medium heat until tender. Add the chicken broth and bring to a boil. Lower heat and simmer for 10 minutes.
