Quick and Easy Salad Dressing

Makes about ½ cup
Ingredients
2 oil-packed anchovy fillets
3 tablespoons olive oil
1 ½ tablespoon good-quality vinegar (such as wine, balsamic, or sherry)
1 tablespoon Dijon mustard
salt and pepper to taste
Instructions
Mash the anchovy fillets with a fork. Place in a small jar that has a tight-fitting lid. Add the oil, vinegar, mustard, salt, and pepper. Cover with the lid and shake vigorously until well blended, about 15 to 30 seconds. Serve immediately or store in the refrigerator, covered, for up to 4 days. Shake the dressing before serving.
