Peanut Dipping Sauce

Source Dr. Atkins' Quick & Easy New Diet Cookbook

Total carbohydrates: 13 grams per cup

Makes about 1 cup

Ingredients

3 tablespoons peanut butter

1 tablespoon unsweetened coconut milk (optional)

1 tablespoon toasted sesame oil

½ cup water

1 tablespoon soy sauce

Juice of ½ lime

1 small clove garlic

1.2 cup chopped fresh cilantro

Instructions

Combine the peanut butter, coconut milk, if using, sesame oil, water, soy sauce, lime juice, garlic, and cilantro in a food processor and puree until smooth, about 1 minute. (If the sauce is too thick, add a bit more water.) Serve immediately or store, covered, in the refrigerator for up to 4 days.
