Snow Peas with Hazelnuts

Serves 2 or 3
Ingredients
½ cup diced slab bacon
2 tablespoons butter
½ pound snow peas, washed
2 tablespoons hazelnuts, skinned
salt and pepper to taste
Instructions
Heat a large, heavy skillet over medium-high heat until hot. Saute the bacon, stirring occasionally, about 2 minutes, until browned. Remove the bacon from the skillet and pour out the bacon fat. In the same skillet heat the butter over low heat until the foam subsides. Add the snow peas and cook until crisp-tender, about 1 minute.
Heat a small skillet over medium heat until hot. Add the hazelnuts and roast, shaking the skillet occasionally, for 4 to 5 minutes, until golden and aromatic. Add the bacon, snow peas, salt, and pepper, and sauté over medium-high heat for 2 minutes. Serve immediately.
