Beef Burgers with Feta and Tomato

Per Serving: 4.8 grams

Serves 2

Ingredients

1 pound ground beef (round or chuck)

1 ½ teaspoons chopped fresh thyme leaves or ¾ teaspoon crumbled dried thyme)

1 scallion (white part only), chopped

½ cup chopped fresh spinach

¼ cup chopped tomato

2 ounces crumbled feta cheese

Salt and pepper to taste

1 teaspoon chopped fresh mint leaves (optional)

Instructions

Combine the ground beef, thyme, scallion, spinach, tomato, feta, salt, pepper, and mint, if desired, in a large bowl and mix well. Form into 2 patties. Grill or panfry over medium-high heat for 5 minutes on each side for medium-rare, or until desired doneness. Serve immediately.
